The "ají cachucha" is a variety of pepper, which has many properties, both from a nutritional point of view and in terms of flavor and aroma.

It is grown in field and greenhouse conditions. But it can also be grown indoors, in pots that reach an average temperature of 20ºC, and in a place where there is a lot of light. It is pollinated manually with a cotton swab.

The "ají cachucha" or "Capsicum chinense Jacq". scientific name (Shagarodsky, T. et al., 2003), it is a variety that is cultivated in tropical countries.

When they germinate, between 10 and 12 days, 4-5 plants are left in a 16'in diameter pot, then the pots are placed near a window where there is light.

Once the plants bloom, they are pollinated with the help of a cotton swab, gently touching the flower and trying to get the pollen to be drawn from the stamens to the stigma of the same flower, thus fertilizing with great care and patience.

When this step has been completed, it only remains to wait for the fertilization and fruit ripening process to be completed.
